Recipe for Boy’s Day

In celebration of boyfriend's day, we have for you a recipe created together with MasterChef finalist Anna Lempicka.

 

Boy's Day Breakfast.


Recipe for toast with burrata, bacon, caramelized onions and basil pesto.

 

Ingredients:

- 2 slices of toasted bread with spelt flour
- 1 burrata
- 4 slices of bacon
- 1 tomato
- 1 onion
- 1 teaspoon of honey
- 1/3 cup water
- 1 tsp balsamic vinegar
- Arugula
- Salt and pepper

 

Pesto:

- About 2 cups fresh basil
- 1/3 cup pumpkin seeds
- 1/3 cup olive oil
- 1 cup grated parmesan/pecorino cheese
- 1/2 clove of garlic
- Spoonful of lemon juice
- 2 ice cubes
- Salt and pepper to taste

 

Preparation:

1. Pumpkin seeds: In a dry skillet, roast pumpkin seeds for a few minutes until they begin to brown. Set aside.
2. Bacon: In a dry skillet, fry bacon until golden brown. After frying, drain on paper towel.

3. Caramelized onions: In a frying pan after bacon, put sliced onions in feathers. Fry over low heat until golden and soft. Add a teaspoon of honey and 1/3 cup of water, stirring until the water is reduced.

4. Pesto: Put roasted pumpkin seeds, grated cheese, garlic, oil, salt and pepper in a blender. Blend until smooth. Finally, add basil leaves, ice cubes and blitz for another minute.

5 Assemble the toast:
- Spread basil pesto on the baked bread.
- Arrange arugula, caramelized onions, tomato slices, a dash of salt and pour balsamic vinegar.
- Lay slices of bacon and pieces of burrata.
- Sprinkle the whole thing with roasted pumpkin seeds and crumbled bacon, and finally add freshly ground pepper.

6. Serving: serve immediately, preferably warm.
