It's time for a classic from the AirFryer - Sweet Potato Fries with chili mango sauce!
Ingredients:
- 2 yams
- 2 tablespoons of potato starch
- 1 tsp sweet paprika
- 1 tsp granulated Garlic
- 1/2 tsp salt
- 3 Tbsp oil
- Parmesan cheese to sprinkle on top
- Fresh parsley for sprinkling
Preparing the fritters:
1. soaking the yams: Peel the yams and cut them into fries. Soak them in cold water with ice cubes and let them soak for about 30 minutes. This will make the fries crispier.
2 - Drain: Remove the yams from the water and dry thoroughly with a paper towel.
3. Seasoning: In a bowl, mix potato starch, sweet paprika, granulated garlic and salt. Add oil to the yams and coat them in the spice mixture.
4 - Bake: Set your fryer to 180°C and bake the fries for 15 minutes.
5. Stirring: After this time, stir the fries in the basket to evenly brown them.
6. toasting: Increase the temperature to 200°C and bake another 15 minutes until the fries are golden and crispy.
7. Serving: When finished baking, sprinkle the fries with grated Parmesan cheese and freshly chopped parsley.
Chili-mango sauce
Ingredients:
- 1 ripe mango
- 3-5 cm of fresh ginger (peeled)
- 2 cloves of fresh garlic
- 1/2 hot bell pepper
- A few leaves of fresh cilantro
- Juice of half a lime
- A pinch of salt
- 2 Tbsp maple syrup
- 3 Tbsp mayonnaise
Blend: Blend the mango, ginger, garlic, bell bell pepper, cilantro, lime juice, salt and maple syrup to a smooth paste.
Mayonnaise: Add mayonnaise to the sauce and blend again until you get a creamy consistency.
The sauce is ready to serve with fries!
