Ingredients:
1. to coat the onions:
- 1 cup of whole wheat flour
- 1 teaspoon salt
- 1 teaspoon pepper

- 1 cup kefir
- 1 egg
- 1 cup wheat flour
- 1/3 teaspoon baking powder
- 1/3 teaspoon salt
- 1/3 teaspoon hot bell pepper
- Black food coloring (for intense color)

- 1.5 cups of panko (Japanese coating)

- 2 large onions
Preparation:
1. Onion preparation: Peel the onions and cut into thick rings (about 0.5-1 cm). Separate the individual rings.
2. Coating mixture: In a bowl, combine 1 cup of flour, 1 teaspoon of salt and 1 teaspoon of pepper.
3. Egg mixture: In another bowl, mix kefir and egg. Then sift into this mixture 1 cup of flour, 1/3 teaspoon of baking powder, add black food coloring, 1/3 teaspoon of salt and 1/3 teaspoon of hot bell pepper. Mix until you get a uniform dark paste.
4. Panko coating: In a third bowl, place the panko.
5. Coating the discs: Coat each onion disc first in the flour and spices, then dip in the egg mixture, let the disc sit on a plate until the excess mixture drips off and finally coat thoroughly in the panko. Repeat for all discs.
6 Prepare for baking: Arrange the coated onion rings in the basket of the deep fryer, keeping spaces. You can spray them with oil spray.
7 Baking: Set your fryer to 180°C and bake the onion rings for about 15 minutes, flipping them over halfway through baking.
8. Serving: Ser ve the finished onion rings with sauce.
Spicy mayonnaise sauce with jalapeño peppers.
Ingredients:
- 4 tablespoons of mayonnaise
- 3-4 green jalapeño peppers from a jar (you can use less or more, depending on your preferred spiciness)
- 1 tablespoon of tomato paste
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Red food coloring
Preparation:
1. Blend: Place mayonnaise, jalapeño peppers, tomato paste, salt, pepper, add red food coloring in the blender cup.
2. Blend everything on high speed until the sauce is smooth. Taste and adjust seasoning if necessary according to your preference.
3. serving: transfer the sauce to a bowl and serve as a dip for onion rings.
